Smoked Sweet Potatoes

Sweet potatoes are cut into bite sized pieces, seasoned with a dry rub and smoked until tender and creamy.

Ingredients
  

  • 2.5 lbs sweet potatoes
  • 2 tsp canola oil
  • 3 tbsp margarine or butter
  • 3/4 cup chicken stock
  • Dry Rub
  • 1 tbsp salt
  • 1 tbsp smoked paprika
  • 1 tbsp chili powder
  • 1 tbsp turbinado sugar
  • 1 tsp black pepper
  • 1 tsp chipotle powder

Instructions
 

  • Combine the dry rub ingredients and mix well.
  • Wash the sweet potatoes and cut into bite sized chunks.
  • Place the potatoes into a disposable foil pan.
  • Lightly coat the potato pieces in oil.
  • Toss the potatoes with the dry rub until well coated on all sides.
  • Add three tablespoon of margarine to the foil pan.
  • Set your pellet grill to 250 F.
  • Place the potatoes into the smoker and cook for one hour.
  • Add 3/4 cup of chicken stock to the pan, cover tightly with foil and smoke for one hour or until the potatoes are fork tender.

Notes

These potatoes are a great side dish to throw on your smoker while you are cooking up a batch of ribs. 
You can smoke these potatoes at a different temperature if desired but adjust your cook times accordingly.
