Smoked Brats on a Pellet Grill {225F}

Brats are smoke on a pellet grill to a temp of 140F and then transferred to a beer and onion bath where they simmer in flavor while they finish up cooking.

Ingredients
  

  • 1 package bratwurst sausages 5-7 links
  • 3 cans Pilsner style beer
  • 1 large onion

Instructions
 

  • Remove the skin from the onion and roughly chop.
  • Pour the beer into a foil pan and add the onions.
  • Set your pellet grill to 225F using hickory pellets
  • Place the beer and onion bath in he hottest part of your smoker. In a Pit Boss this will be directly over the flame broiler.
  • Let the beer bath heat through for 15 minutes.
  • Place the brats on the smoker and cook for 30 minutes until an internal temperature of 140F is reached.
  • Transfer the brats to the beer and onion bath and let simmer for 15 more minutes or until an internal temperature of 165F is reached.
  • Remove the brats from the smoker and serve with mustard and pickles.

Notes

Once the brats have reached 165F you can remove the beer bath from the smoker and use it as a "holding tank" for the brats.  The brats will not overcook while holding but will soak up more flavor.
