Homemade Bratwurst

Freshly ground pork is mixed with cream, eggs and spices to make a classic German Sausage

Ingredients
  

  • 2.5 lbs ground pork butt
  • 1/2 pint heavy cream
  • 2 whole eggs
  • 2 tsp ground white pepper
  • 1 tsp mace
  • 1 tsp nutmeg
  • 1 tsp ground ginger
  • 1 tsp smoked paprika
  • 1 package natural hog casings

Instructions
 

  • Combine the meat, cream, eggs and seasonings and mix thoroughly.
  • Place meat mixture in the freezer to cool for 15 minutes.
  • Stuff the meat mixture into natural hog casings and twist off to form 5 inch links.
  • Refrigerate sausages for an hour to let the flavors blend.
  • Cook the bratwurst to an internal temperature of 165F.
  • Serve with mustard.

Notes

These sausages are great when smoked, grilled or poached in a beer an onion bath.  You can also cook them in the oven but will be missing some flavor layers that you get with other cooking methods.
