Combine the meat, cream, eggs and seasonings and mix thoroughly.
Place meat mixture in the freezer to cool for 15 minutes.
Stuff the meat mixture into natural hog casings and twist off to form 5 inch links.
Refrigerate sausages for an hour to let the flavors blend.
Cook the bratwurst to an internal temperature of 165F.
Serve with mustard.
Notes
These sausages are great when smoked, grilled or poached in a beer an onion bath. You can also cook them in the oven but will be missing some flavor layers that you get with other cooking methods.
