Grilled Chicken Thighs on a Weber Charcoal Grill
Chicken thighs are brined, seasoned with salt and pepper and grilled over high heat. The thighs get basted with Italian dressing for a classic finish.

Instructions
Combine the water, salt and sugar to make the brine.
Place the chicken thighs into the brine and refrigerate for four hours.
Remove the thighs from the brine, rinse with cold water and pat dry with paper towels.
Light a full chimney of charcoal briquettes and arrange evenly in the middle of the grill.
Place the thighs on the outer edge of the grill and close the lid.
Flip the chicken every few minutes to make sure it cooks evenly and does not burn.
After the chicken has grilled for 20 minutes start basting with the Italian dressing.
Continue grilling until the thighs reach an internal temperature of 185F (about 45 minutes).
Notes
You can move the chicken directly over the charcoal towards the end of the grilling time to crisp up the skin a little.
