Sous Vide Denver Steak
Denver steaks are seasoned with salt and pepper then cooked sous vide at 130F for three hours. The steaks are seared in cast iron and sliced this across the grain.

- 1.5 lbs Denver Steak
- 1 tbsp kosher salt
- 1 tbsp black pepper
- 1 tbsp peanut oil
Season the steaks with salt and pepper and seal in vacuum bags.
Immerse the vacuum bags in a hot water immersion bath set at 130F.
Let the steaks cook for three hours.
Remove the steaks from the vacuum bag and pat dry.
Heat the peanut oil to nearly smoking in a cast iron skillet.
Sear the steaks in the cast iron for one minute per side.
Slice the steaks thinly against the grain and serve.
The Denver steak goes great with twice baked potatoes, steamed asparagus and mushrooms sautéed in butter.
