Smoked Tri Tip on a Weber Kettle

A tri tip roast is seasoned and then smoked on a Weber charcoal grill with pecan. The roast gets a quick sear before slicing and makes incredible sandwiches.

Ingredients
  

  • 1 tri tip roast About 2.5 lbs
  • 2 tbsp salt
  • 2 tbsp black pepper
  • 1 tbsp chili powder

Instructions
 

  • Season the tri tip with the salt, pepper and chili powder on all sides. Allow the roast to rest 30 minutes.
  • Set up your grill/smoker for indirect heat running at 250F.
  • Place the tri tip on the indirect side of your smoker and use pecan or hickory for smoke.
  • Smoke for 90 minutes or until the internal temperature is 125F.
  • Move the tri tip directly over the heat and sear for 90 seconds on each side.
  • Remove the tri tip from the smoker and let rest for 15-20 minutes.
  • Slice the roast thinly across the grain and serve.

Notes

The grain structure of the tri tip shifts about halfway through the roast so pay attention while you are slicing to always stay against the grain.
