Bratwurst on the Weber Q1200

Bratwurst are simmered in an aromatic beer bath for 15-20 minutes before being finished directly on the grill.

  • 5 bratwurst
  • 2 12 oz cans of beer
  • 1 large onion
  • 1 large red bell pepper


  • Slice the onion and red pepper
  • Add the onions and peppers to a 10 inch foil pan with the two cans of beer.
  • Place the foil pan on the grill on "High" and bring the beer to a simmer.
  • Once the beer simmers reduce the heat to "Low" and let the onions and peppers cook in the beer for 15 minutes.
  • Add the bratwurst to the foil pan and let them poach in the beer for 15-20 minutes until an internal temperature of 165F.
  • Remove the brats from the beer bath and cook directly on the grill grate for 3-4 minutes to put color on the sausage.
  • Serve with a warm burn and brown mustard.
