Smoked Turkey Breast {225F}

A turkey breast is brined, seasoned and smoked at 225F until an internal temperature of 165F is reached. Depending upon the size of the breast the smoking will take between 1.5 and 4 hours.

Ingredients
  

  • 2 pound turkey breast bone in, skin on
  • 1 quart water Brine
  • 1/3 cup salt Brine
  • 1/2 cup brown sugar Brine
  • 2 tbsp poultry seasoning

Instructions
 

  • Combine the brine ingredients and stir to dissolve.
  • Brine the turkey breast in the refrigerator for at least four hours.
  • Remove the breast from the brine, rinse with cold water and pat dry with paper towels.
  • Season the turkey with the poultry seasoning making sure to add some under the skin.
  • Smoke the breast at 225F with a mild wood such as apple.
  • Smoke for 1.5 for a small breast and 3 hours for a large breast. The turkey is done when it reaches an internal temperature of 165F.

Notes

A smoked turkey breast is perfect for slicing into sandwiches or even for a weeknight meal.  Don't worry if the skin comes out tough or rubbery as that is a common result when smoking poultry.
