How to Make Beef Bacon

If you have a beef belly then you are morally obligated to make Beef Bacon and it's not that difficult!

Step 1: Cure the Beef Belly

Evenly coat the beef belly with Morton Tenderquick. Use 1 Tbsp per pound of meat. Put the meat in a Ziploc and into the fridge for 5 days. Flip it once a day.

Step 2: Rinse

After 5 days, rinse off the surface and pat it dry with a paper towel. Now it's time to season. All you need to do is coat it with black pepper.

Step 3: Smoke the Bacon

Put the belly on the smoker at 250F. I use hickory and smoke it until it reaches 150F. It takes about 2-3 hours. When finished, cool it in the fridge before slicing.

Step 4: Slicing and Eating

I slice the beef bacon thick and bake it at 350F until crispy. You can also dice it into chunks to make the best pot of pinto beans in the world.

Pro Tip

The texture, melting point, flavor and amount of the fat on beef bacon is very different than pork bacon.  That's why this bacon is best sliced thick.
