Smoked Bacon Wrapped Potato Wedge

This is a simple but very impressive side dish. I devoured these before I could ever take them in the house...

Step 1: Cutting Potatoes

To begin, cut a potato into quarters then cut the quarters in half. That will get you 8 wedges that are about an inch thick.

Step 2: Wrap in Bacon

Wrap each wedge with a slice of bacon. It's not rocket science. Just wrap 'em up.

Pro Tip!

Use cheap bacon! You want bacon that is thin and fatty because it wraps so much easier, and cooks faster, than meaty thick cut bacon. 

Step 3: Add Seasoning

Since the bacon is salty, use a low salt rub that has plenty of sugar and heat. Season all sides liberally.

Good Rub Recipe

If you don't have a go-to rub, try this one: – 1/2 cup sugar – 1/4 cup smoked paprika – 2 tbls chili powder – 1 tbls black pepper

Step 4: Get Smoking!

I used my Z Grill at 275F with pecan pellets. After an hour, I raised the temperature to 350F for 20 minutes. When the bacon is crisp, they're done!
