BBQ Turkey Meatballs with Bacon and a Pepper Jelly Glaze

It's that time of year where we love everything about turkey!

Start with Turkey Thighs

I started with two large turkey thighs that weighed 3.5 lbs total. Remove the bone, cut the meat into strips, then chill the meat in the freezer for about 20 minutes.

Let's Grind!

After the turkey meat has chilled run it through your meat grinder; I use the grinder attachment on my KitchenAid mixer.

Add Other Ingredients

After you grind the turkey, combine it with the other ingredients. I'll show you those on the next slide.

Turkey Meatball Ingredients

3 lbs ground turkey thighs (with skin) 1/2 cup Italian seasoned bread crumbs. 1 egg 1 Tbsp Dijon mustard 1 Tbsp hot sauce 1 teaspoon salt 1 teaspoon pepper

Roll 'em Up

After you mix in all the ingredients, it's time to roll up the meatballs. I like to make them a little larger than a golf ball.

Wrap in Bacon

Each meatball was wrapped in half a slice of thin cut bacon secured with a toothpick.  I'm getting hungry already...

Let's Start Cooking

The bacon wrapped meatballs were then cooked on a kettle set up for indirect heat (275F) for about 30 minutes.

The Secret Ingredient

After 30 minutes, the meatballs had an internal temperature of 165F. So, I brushed them with a secret ingredient: Tabasco Pepper Jelly

Dig In!

These turkey meatballs are amazing.  They are perfectly cooked and that sweet heat glaze just sends them over the top!
