If you are looking for a simple side dish that will impress your guests then you really ought to try these Smoked Bacon Wrapped Potato Wedges. These are simple to make and taste amazing.
Start by taking a large baking potato and cutting it in half.
Cut the halves in half to make quarters.
Now cut the quarters in half. That should get you eight potato wedges that are around one inch thick.
Next you are going to wrap each wedge with a slice of bacon. Here is a BIG TIP…use the cheapest bacon that you can find. You want bacon that is thin and fatty because it wraps so much easier, and cooks faster, than meaty thick cut bacon.
There isn’t a trick to wrapping the wedges. Just do it.
I had a one pound package of bacon that had enough slices for 12 wedges.
Once the bacon is wrapped around the potato wedges it is time to add some seasoning. The bacon will bring a lot of salt to the party so go with a low salt rub that has plenty of sugar and heat.
Here is a good rub recipe to use on the bacon:
- 1/2 cup sugar
- 1/4 cup smoked paprika
- 2 tbls chili powder
- 1 tbls black pepper
Season all sides of the wrapped potatoes liberally.
Once the potatoes are wrapped and seasoned it is time to get them onto your smoker!
I used my Z Grills 600D3E Open Flame Pellet Grill for this cook and had it running at 275F with pecan pellets. There is not a magic “time and temperature” combination for this recipe so feel free to play around.
After the wedges cooked for 1 hour at 275F I raised the temperature of the smoker to 350F and let them cook another 20 minutes.
If you are looking for a single setting then I would suggest cooking at 325F and start checking the potatoes after 45 minutes or whenever your nose starts smelling the delicious smell of bacon.
The potatoes are done when the bacon has started to crisp and a toothpick slides through the wedges.
We devoured these wedges as they were but you could take these even more over the top by brushing them with some barbecue sauce and serving with sour cream.

Smoked Bacon Wrapped Potato Wedges
Ingredients
- 2 large Baking potatoes
- 1 lb thin cut bacon
- 1/2 cup sugar Dry Rub Ingredient
- 1/4 cup smoked paprika Dry Rub Ingredient
- 2 tbls chili powder Dry Rub Ingredient
- 1 tbls black pepper Dry Rub Ingredient
Instructions
- Slice each potato into eight wedges about one inch thick.
- Wrap each potato wedge with a slice of thin sliced bacon.
- Combine the dry rub ingredients and mix well.
- Season the wedges liberally with the dry rub on all sides.
- Smoke the wedges at 325F until the bacon starts to crisp and a probe easily slides through the potatoes, abut 45 minutes.
