I was strolling through Costco the other day and saw something that looked too good to be true, Pastrami Beef Short Ribs! I absolutely love smoked beef ribs and I love pastrami even more. Combine them both and you have a true masterpiece on your hands….or in your mouth….whatever.
Even if you can find a decent slab of beef short ribs, which is extremely hard to do in most places, the process of turning them into pastrami takes 3-5 days. When I finally find some nice beef ribs I rarely have the discipline or patience to cure them on my own. If these premade pastrami ribs were what I was hoping there were then it would be a game changer for me!
The pastrami beef ribs cost about nine bucks a pound and this two bone pack ended up costing a little over $13. While this isn’t cheap it is a fair price for what you are getting.
These ribs were already cooked and just needed to be warmed up. The heating instructions said to remove the ribs from the plastic, wrap in aluminum foil and heat in a 425F oven for 90 minutes. Straight out of the packaging the aroma told me that I had something good on my hands.
I stuck the ribs in the oven and then ran some errands around town with my daughter to pass the time.
When we got back to the house the smell coming from the oven was amazing. I unwrapped the ribs, burning my fingers in the process, and sliced those two beautiful bones apart.
Guys, these were a homerun!
Tender, salty, smoky, beefy….falling off the bone delicious!
There was a large fat pocket on the ribs which is to be expected. My dogs got that as a treat. They love me even more now.
Perfectly cured, seasoned and smoked. As long as these are available at Costco I can’t imagine that I would ever go through the hassle of making my own.
Of course, that is one of the problems with Costco…they get you hooked on an item and then move it out of rotation. Oh well, I am going to enjoy these while I have them.
