One of the perks of writing about barbecue is that every now and then someone sends me something awesome.
I bumped into the owners of Black Swan Sauces back in February and they offered to send me some of their sauces for evaluation.
I received three 18 oz sauces and spent the next few weeks in barbecue bliss 🙂
Black Swan offers three flavors of sauce:
Mild: Sweet Cognac Traditional Recipe
This mild sauce explodes with flavor delivered from a base of tomato paste, brown sugar and vinegar that is supplemented with generous amounts of ginger, orange, cognac and other goodies.
The Sweet Cognac sauce sets up with a beautiful color on slow smoked ribs and the flavors are deep and bright without any of that sticky sweet you get from high fructose corn syrup based sauces.
This was a good day for ribs.
Medium: Black Swan Original Sauce
Describing flavor is a tough gig.
Let’s go with a tomato based sauce that starts you off with a rich tangy experience that fills your mouth and ends up hitting you with a peppery bite.
There is enough of a pepper bite to classify this as a true “Medium” sauce.
I used Black Swan Original on a pulled chicken slider with slaw and it brought everything together.
The tangy bite of the sauce combined with the smoked chicken and creamy slaw in a way that was just freaking fantastic.
Hot: Beso del Feugo
I thought the Sweet Cognac was nice.
I really liked Black Swan Original.
…..and then I tried the Beso del Fuego.
If you have ever wanted a full flavor barbecue sauce that brought the heat without unleashing stupid pain then this is the Mother Lode.
I ate Beso del Fuego for breakfast with pork tamales.
I ate Beso del Fuego for lunch poured over stuffed mushrooms.
I ate Beso del Fuego for dinner over grilled pork steaks.
Beso del Fuego was my “go to” sauce for a week until my bottle was just about empty.
I knew this sauce was incredible when I stopped to figure out what would be the BEST way to use the last little bit in the bottom of the bottle.
After much deliberation I went with a fresh ground chuck cheeseburger.
It turns out that I choose wisely.
Beso del Fuego and beef is a serious combination that you NEED to experience.
